High Protein Avocado Spinach Omelette & Taters

Ingredients

    ▪ 1 Cup Cauliflower
    ▪ 120 Grams Potatoes O'Brien
    ▪ 1-2 Cups/handfuls of Spinach
    ▪ 150-200 Grams Egg Whites
    ▪ 40-60 Grams Avocado
    ▪ 30-50 Grams Tomato
    ▪ Cooking Spray
    ▪ 1 Tablespoon Olive Oil

    Seasonings:
    ▪ Garlic Powder
    ▪ Pink Himalayan Sea Salt
    ▪ Ground Black Pepper
    ▪ Everything Bagel Seasoning (cut down on sea salt if using this as it has salt in it)

How to 

1. Prep a medium pan by lightly spraying and warming over medium heat before placing cauliflower and spinach into pan and cooking until spinach cooks down and cauliflower begins to brown. Make sure the pan is medium/large so the egg can spread out thin and cook through without flipping

2. In a separate pan, spray and warm before placing hashbrowns of choice in, covering, and cooking for 5-7 minutes

3. Lower stove heat to low/medium for the cauliflower and spinach and pour egg whites over the cauliflower and spinach then season with recommended seasonings and cover for 3-5 minutes

4. Once egg is cooked through, plate and add olive oil to hashbrowns and cook uncovered for 4-6 minutes before plating

5. Toast english muffin and top with avocado, season and plate

Tips:
1. By now I'm sure we're all obsessed with this seasoning! For me, Aldi has the best flavor and the best price when it comes down to it!
2. I have seen a lot of "everything bagel" seaoning at Tj Maxx or Homegoods in larger packaging and relatively low prices but I'm here to warn you and say, not all everything bagel seasonings are created equal!
3. I have heard people obsess over Trader Joes version--I think it's pretty much the same, Aldi just has better pricing!

Liquid Egg Whites
Store I Purchase At: Aldi

Where In The Store: Seasoning section
Tips:
1. Every time I go grocery shopping this is something that I'm throwing in my cart! Great to add to whole eggs for breakfast or as a replacement for whole eggs in baking!
2. You can pretty much get liquid egg whites at any grocery store these days but I stick with Aldi because the flavor/product is consistent and the pricing is always the best when compared to the competition

Breakfast Potatoes

Where In The Store: Frozen potatoes aisle
Tips:
1. Definitely a staple and something you'll always find in my freezer! I love the shredded and potatoes o'brien kind.
2. The potatoes O'Brien style already has peppers and onions mixed into it which, hello!, I love so typically I'll scoop that style
3. I find that Aldi & Jewel always have great pricing on these and sometimes even a 2 for $x deal which is just more of an excuse to stock up!
