Low Fat Toad In The Hold Breakfast Stir Fry

Ingredients

    ▪ Cooking Spray
    ▪ Two Slices Multi-Grain Toast
    ▪ 150 Grams Liquid Egg Whites
    ▪ 160 Grams Frozen Stir-Fry Vegetables
    ▪ 0 Calorie Butter Spray/butter of choice
    ▪ 40-60 Grams Avocado (1/2 a medium avocado)

    Seasonings:
    ▪ Garlic Powder
    ▪ Pink Himalayan Sea Salt
    ▪ Ground Black Pepper
    ▪ Everything Bagel Seasoning (cut down on sea salt if using this as it has salt in it)

How to 

1. Cook spinach and frozen veggies in a medium sized sprayed and warmed pan. Season and cook until browned then set aside

2. Prepare toast by toasting in toaster just enough to get slight color. Once toasted, cust a hole in the middle using a glass or cookie cutter & coat one side and middle piece with butter

3. In a medium wamred pan, spray and place toast butter-side down then pour about 1/4 cup egg whites into center of toast

4. Season egg white then cover pan and let cook for about 2-3 minutes or until egg white cooked through 75% of the way. Uncover the pan and flip toast and middle piece and cook for another 2 minutes

5. Repeat steps 5-7 with second piece of toast

6. Top with avocado and season

Tips:
1. By now I'm sure we're all obsessed with this seasoning! For me, Aldi has the best flavor and the best price when it comes down to it!
2. I have seen a lot of "everything bagel" seaoning at Tj Maxx or Homegoods in larger packaging and relatively low prices but I'm here to warn you and say, not all everything bagel seasonings are created equal!
3. I have heard people obsess over Trader Joes version--I think it's pretty much the same, Aldi just has better pricing!

Liquid Egg Whites

Tips:
1. Every time I go grocery shopping this is something that I'm throwing in my cart! Great to add to whole eggs for breakfast or as a replacement for whole eggs in baking!
2. You can pretty much get liquid egg whites at any grocery store these days but I stick with Aldi because the flavor/product is consistent and the pricing is always the best when compared to the competition

Butter Spray
Store I Purchase At: Aldi or Jewel Osco (Parent company: Albertsons)

Where In The Store: By the butter, cream cheese, and eggs
Tips:
1. Spray butter is one of the easiest and tastiest ways to add flavor to your food without scooping and spreading! I love to spray some toast or even lightly spray a salad to add a buttery taste and calories are so minimal!
