Dairy Free Spinach & Jalepeno Rolls

Ingredients

    For The Dough:
    ▪ 1/2 Cup All Purpose Flour
    ▪ 1/4 Cup Almond Milk (or your favorite)
    ▪ 1 Teaspoon Baking Soda
    ▪ 1 Tablespoon White Vinegar
    ▪ 1 Tablespoon Italian Seasoning OR Oregano
    ▪ 1 Tablespoon Garlic Powder
    ▪ 1/2 a Jalepeno Coined
    ▪ 1 Egg White for Brushing

    For The Filling:
    ▪ 1/2 Cup Diced Onion
    ▪ 1/2 Cup Jalapeno
    ▪ 2 Tablespoons Garlic
    ▪ 12 Cups Spinach
    ▪ 3 Ounces Tomato Paste
    ▪ 1 Cup Chicken Broth

    Seasonings:
    ▪ Salt
    ▪ Pepper
    ▪ Oregano
    ▪ Italian Seasoning

How to 

1. Preheat Oven to 400°F, line and lightly spray a baking sheet and set aside. Spray and warm a medium pan and begin browning garlic, onion, and jalapeno over low heat

2. In a meidum bowl combine all ingredients for the dough (except for the jalaepno & egg), flour a surface and begin kneading the dough.Roll out to a rectangle about 12-16 inches

3. Once the veggies begin browning, add and cook down spinach before adding tomato paste, chicken broth and seasoning. Warm for 2-3 minutes then place into the fridge or freezer for 15-20 minutes to cool

4. Once cooled, spread the filling onto the dough and roll up lenghtwise, the way you would for cinnamon rolls. This may take a minute since the sauce might still be warm but take your time

5. Place roll into freezer for about 10-15 minutes before cutting into 16 slices, placing on baking sheet, brushing with egg whites & topping with 1/2 a jalapeno coin

6. Bake for 25-35 minutes or until dough browns and is cirspy to the touch! Store in the refridgerator

Tips:
1. If you're anything like me, cutting onions leaves you sobbing and your eyes burning! Well I'm here to tell you that frozen diced onions are here to save your life!
2. I've tried to chop onions myself and freeze them and they always smell up the entire kitchen--these have no smell and are so easy to pop into your breakfast, lunch, or dinner! They defrost super quick and crisp up just like fresh onions would

Tips:
1. Milk alternatives are pretty popular these days but I love me some almond milk! I typically will buy unsweetened vanilla or unsweetened original. Both options are great for not only baking but also cooking savory dishes!
2. Making your own almond milk is also super easy and an option but let's be real, I'm at the store buying a container every few weeks.
3. The great thing about almond milk is that it lasts a super long time! A lot of containers will say use within 7-14 days of opening but I have kept containers for at least a few weeks and they're still good as new. How bad can almond and water really get??
