Ingredients
- For The Clusters
▪ 75 Grams Egg Whites (1/2 Cup)
▪ 42 Grams Light Blue Agave or Honey (2 Tablespoons)
▪ 120 Grams Shredded Coconut Sweetened (Roughly 1 Cup)
▪ 28 Grams Chopped Pecans (1/4 Cup)
For The Drizzle
▪ 28 Grams Vegan Chocolate Chips
▪ 6 Grams Coconut Oil (1/2 a Tablespoon)
How to
1. Preheat oven to 350°F and prep a baking sheet by lining with parchment paper and lightly spraying with non-stick spray
2. Using a hand mixer, combine egg whites and agave for at least two minutes and until it becomes a white foam and no liquid is left in the bowl❗️Mix this longer than you think! It'll become a thicker consistency pretty quick buy you should be able to get a peak when you take the whisk out of the bowl so don't be afraid to mix this a little extra
3. Chop pecans (or nuts of choice) then fold into egg white mixture along with shredded coconut and 1/2 the chocolate chips
❗️Easiest way to chop nuts is to pop them in a ziploc bag and crush them with a salt shaker or condiment bottle
❗️Can also add chia seeds, carmel chips, etc.
4. Once all ingredients are combined, place a tablespoon or ice cream scoop sized mound onto baking sheet then bake for 10-15 minutes
5. Combine the remaining chocolate chips with the coconut oil and melt beefore drizzling on top of each cluster. Pop the tray into the freezer or fridge to allow the chocolate to harden before packing or storing

Tips:
1. Every time I go grocery shopping this is something that I'm throwing in my cart! Great to add to whole eggs for breakfast or as a replacement for whole eggs in baking!
2. You can pretty much get liquid egg whites at any grocery store these days but I stick with Aldi because the flavor/product is consistent and the pricing is always the best when compared to the competition

Tips:
1. Peanut butter without all the fat! Now I'm not saying don't eat fat, we all need to consume a good amount each day, but powdered peanut butter gives you the abililty to add flavor to recipes or top your meals with peanut butter and save some calories!
2. The best advice I have when adding water to make a spread is to use a 2:1 ratio. Two parts powder, 1 part water. It's easy to make the spread super water by adding even a little bit too much water so it's really best to add a tiny bit at a time until the consistency is just right!
3. Sometimes the powder can lack a little bit of the sweetness you would get with a normal peanut butter spread so if that's the case, add a little bit of stevia and you got yourself a sweet and low fat peanut spread!
