Cauliflower & Spinach Open Omelette

Ingredients
- ▪ Cooking Spray
▪ 60 Grams Cauliflower
▪ 1-2 Cups/Handfuls of Spinach
▪ 1 Whole Egg (50-55 Grams)
▪ 150 Grams Egg Whites
▪ 1 Whole Wheat English Muffin
▪ 50-60 Grams Avocado (1/2 a medium avocado)
▪ 140-160 Grams Califnornia Orange
Seasonings:
▪ Garlic Powder
▪ Pink Himalayan Sea Salt
▪ Ground Black Pepper
▪ Everything Bagel Seasoning (cut down on sea salt if using this as it has salt in it)
How to
1. Prep a medium sized pan by spraying with nonstick spray and heating over medium heat before browning cauliflower and spinach in
2. Lower stove heat to low/medium and add whole egg and egg white to cauliflower and spinach and season before covering and cooking for 3-5 minutes
3. Once egg white is cooked through and egg yolk gets a light layer over it, plate and set aside while toasting english muffin then top with avocado

1. These have been a staple for me since I was a young kid! I mean everyone loves a good english muffin!
2. There are so many different flavors available (whole wheat, multi-grain, etc) and a lot of times they're on when you buy two

Tips:
1. By now I'm sure we're all obsessed with this seasoning! For me, Aldi has the best flavor and the best price when it comes down to it!
2. I have seen a lot of "everything bagel" seaoning at Tj Maxx or Homegoods in larger packaging and relatively low prices but I'm here to warn you and say, not all everything bagel seasonings are created equal!
3. I have heard people obsess over Trader Joes version--I think it's pretty much the same, Aldi just has better pricing!
Liquid Egg Whites

Tips:
1. Every time I go grocery shopping this is something that I'm throwing in my cart! Great to add to whole eggs for breakfast or as a replacement for whole eggs in baking!
2. You can pretty much get liquid egg whites at any grocery store these days but I stick with Aldi because the flavor/product is consistent and the pricing is always the best when compared to the competition
