Dairy Free Glazed Blueberry Donut

Ingredients
- For The Donut
▪1 1/4 Cup All Purpose Flour or Alternative
▪ 1 Teaspoon Baking Powder
▪ 1/2 Teaspoon Salt
▪ 1/4 Cup Sugar or Alternative
▪ 1/2 Cup Almond Milk or Dairy Alternative
▪ 1 Tablespoon Coconut Oil
▪ 1 Tablespoon Almond Milk Yogurt
▪ 1/2- 1 Cup Blueberries
Optional Glaze
▪ 2 Cups Powdered Sugar
▪ 1/2 Teaspoon Vanilla Extract
▪ 1/4-3/4 Cup Water: Add more if needed

How to
1. Preheat oven to 350°F and prep a donut pan by lightly spraying with non-stick spray
2. Whisk together dry ingredients for the donut before whisking in the almond milk and cocnut oil
3. Once all combined, fold in the blueberries and trasnfer to a ziploc bag or piping bag and begin piping into the donut pans
4.Bake for 8-10 minutes or until the donut is springy to the touch
5. Mix together ingredients for the glaze if desired and once donuts are baked and cooked, dip top half in and then place dry side down on cooling rack for 10-15 minutes before serving!
6. Store in the fridge to keep glaze from melting

Tips:
1. If you're dairy free then this is a great alternative for you, along with coconut yogurt! It is a thinner consistency and has less protein than greek yogurt but in general can be substituted in recipes the same way!
2. The flavor is not as subtle or smooth as greek yogurt but again, it gets the job done and is great for those of you who are doing your best to avoid dairy!
Stevia

Tips:
1. If you're looking for a sugar substitute that is natural, stevia is the route to go! Definitely my favorite alternative and I love that it actually comes from a plant and is not made with artificial ingredients
2. You can buy individual packets of it, which I buy for my coffee, but then you can also buy a jumbo bag for baking, which I usually also purchase!
3. Many times the package of stevia will say that it can be substituted 1:1 compared to sugar but I will say if you google it--the one thing everyone says is not to follow that. Stevia is many times sweeter than sugar so it's best to do about a tbsp for every 1/2-1 cup of sugar and taste test and add as you go. If you add too much stevia you'll find your baked goods to almost have a bitter after taste (trust me I've made the mistake a time or two…or 7)

Tips:
1. Milk alternatives are pretty popular these days but I love me some almond milk! I typically will buy unsweetened vanilla or unsweetened original. Both options are great for not only baking but also cooking savory dishes!
2. Making your own almond milk is also super easy and an option but let's be real, I'm at the store buying a container every few weeks.
3. The great thing about almond milk is that it lasts a super long time! A lot of containers will say use within 7-14 days of opening but I have kept containers for at least a few weeks and they're still good as new. How bad can almond and water really get??
