Homemade Coffee Nut Granola

Ingredients

    ▪ 2.5 Cups Old Fashioned Oats
    ▪ 15 Grams Chia Seeds
    ▪ 1/4-1/3 Cup Coffee Grounds
    ▪ 2 Teaspoons Cinnamon
    ▪ 10 Grams Sliced Almonds
    ▪ 1 Tablespoon Coconut Oil
    ▪ 15 Grams Coconut Flakes
    ▪ 15 Grams Crushed Pecan Halves
    ▪ 22.5 Grams (1 Scoop) Bob's Red Mill Vanilla Protein Powder
    ▪ 28 Grams Light Blue Agave (or Honey)
    ▪ 70-80 Grams Walden Farms Blueberry Syrup

How to 

1. Preheat oven to 350 and line a baking sheet with parchment paper--lightly spray with non-stick spray

2. In a large bowl combine oatmeal, chia seeds, cinnamon, protein powder, almonds, and pecans until mixed well

3. Mix in coconut oil and blueberry syrup until mixture is clumpy and everything is well coated

4. Spread out mixture on baking sheet in one even layer and bake for 20 minutes

5. After 20 minutes drizzle agave/honey on top and bake for another 10 minutes before broiling for 2 minutes on high to finish

Tips:
1. Since going dairy free this has been one of my staples! I love that it already has chia seeds in it because otherwise I would definitely adding them!
2. There is a chocolate vegan version available as well as whey protein powders
3. Overall this brand is amazing, they have everything from rolled oats to nutritional yeast, to egg replacer!

1. There's really not enough good things I could say about this product! The flavor is amazing, it's great to add to your oats, fruit, pancakes, or cookie batter & it's zero calories!

Tips:
1. Always having oats on hand is a great idea! If you're ever in need of a flour alternative, simply just take some oats, throw it in a food processor until the consistency is of flour! You'll have yourself oat flour in no time!
2. Oats are one of those great foods because they're complex--essentially what that means is that it takes your body longer to break it down (metabolize it) therefore that's why you'll hear people say oats keep you fuller for longer! Simple carbs like fruit sugars are broken down very quickly by your body and therefore you may find yourself hungry within an hour of eating a bowl of fruit
