Ingredients
- For The Crust
▪ 5 Graham Crackers
▪ 2 Tablespoons Coconut Oil
For The Cheesecake Layer
▪ 8 Ounce Package of Reduced Fat or Vegan Cream Cheese
▪ 170 Grams Plain Greek Ygourt
▪ 1/3 +1/4 Cup Stevia
▪ 2 Tablespoons Lemon Juice
▪ 1 Teaspoon Vanilla Extract
▪ 2 Egg Whites (1/4 Cup)
▪ 2 Tablespoons All Purpose Flour
▪ 1 Cup Blueberries
How to
1. Preheat oven to 350°F and prep and 8x8 baking pan by lining with parchment paper and lightly spraying
2. Crush graham crackers by pulsing in food processor nad crushing in ziploc bag before adding in melted coconut oil and combining until crackers are well coated
3. Press crust into baking pan and bake for 8 minutes before setting aside
4. Using a hand mixer combine cream cheese and yogurt before adding in stevia, lemon juice, vanilla extract, egg whites, and flour
5. Fold in blueberries then lightly pour on top of curst and bake for 25 minutes
6. After 25 minutes, remove and let cool for at least 30 minutes before placing in the fridge for 2-3 hours (preferably overnight)
7. Before serving, garnish with lemon zest

Tips:
1. Great source of protein and probiotic! I love to buy plain because it's really a blank canvas--you can use it to make Tatziki sauce or add some syrup and fruit and make it super sweet!
2. Minimal carbs and no fat per serving and really just a blank canvas! You can flavor and use it however you want!
3. Don't limit yourself with this product--you can create cream sauces, cream cheese spreads, and even homemade biscuits!

Tips:
1. Every time I go grocery shopping this is something that I'm throwing in my cart! Great to add to whole eggs for breakfast or as a replacement for whole eggs in baking!
2. You can pretty much get liquid egg whites at any grocery store these days but I stick with Aldi because the flavor/product is consistent and the pricing is always the best when compared to the competition
