Vegan Cookie Dough Moon Pies

Ingredients
- For The Cookie
▪ 1/4 Teaspoon Salt
▪ 1 Teaspoon Baking Soda
▪ 1/4 Cup Unsweetened Cocoa Powder
▪ 30 Grams/1 Egg White
▪ 2 Tablespoons Coconut Oil
▪ 2 Tablespoons Almond Milk Yogurt
▪ 1/4 Cup Stevia
▪ 1 Cup Flour
▪ 1/2 Cup Almond Milk
For The Filling:
▪ 1 Can White Beans Drained and Rinsed (Can use chickpeas)
▪ 2 Teaspoons Vanilla Extract
▪ 75-80 Grams Cookie Butter
▪ 21 Grams Light Blue Agave or Honey
▪ 15 Grams Oats
▪ 1-2 Tablespoons Stevia
▪ 1/2 Teaspoon Baking Soda
How to
1. Preheat oven to 425°F and line a baking sheet with parchment paper and lightly spray
2. Combine all ingredients for the cookie in a bowl and mixwith hand mixer before transfering to a piping bag or ziploc bag
3. Pipe 16 equal sized pies on the baking sheet and pop into the oven for 5-7 minutes. They should be springy to the touch when cooked
4. While baking, combine ingredients for the filling and mix with a hand mixer then place in the freezer for 10 minutes to cool
5. Cool pies before piping the cookie dough onto half the chocolate pies. Top each pie with cookie dough with a plain chocolate layer and ENJOY!

Tips:
1. If you're dairy free then this is a great alternative for you, along with coconut yogurt! It is a thinner consistency and has less protein than greek yogurt but in general can be substituted in recipes the same way!
2. The flavor is not as subtle or smooth as greek yogurt but again, it gets the job done and is great for those of you who are doing your best to avoid dairy!

Tips:
1. If you haven't heard the hype around cookie butter, stop what you're doing and go pick some up right now! I go through a disgusting amount of containers of these each month because I just can't get enough! It's perfect to top your oats, ice cream, fruit, or toast with!
2. If you've ever tried a Biscoff cookie or had a spicy holiday cookie, that's pretty much cookie butter for you! It's amazing and has less fat than most of your nut butters! I will say it lacks the protein that most nut butters have but I refuse to give this stuff up!

Tips:
1. Every time I go grocery shopping this is something that I'm throwing in my cart! Great to add to whole eggs for breakfast or as a replacement for whole eggs in baking!
2. You can pretty much get liquid egg whites at any grocery store these days but I stick with Aldi because the flavor/product is consistent and the pricing is always the best when compared to the competition
