Ingredients
- For The Rolls
▪ 1 Package Buttermilk Biscuits
▪ 2 Tablespoons Cold Unsalted Butter (Vegan or Regular)
▪ 2 Tablespoons Cinnamon
▪ 5 Tablespoons Stevia
Yogurt Glaze
▪ 2 Ounces Plain Non-Fat Greek Yogurt (or alternative)
▪ 1.5 Tablespoon Light Blue Agave or Honey
▪1 Teaspoon Vanilla Extract
Powdered Sugar Glaze
▪ 1/4 Cup Powdered Sugar
▪ 3 Teaspoons Brown Sugar
▪ 2-3 Teaspoons Almond Milk (or alternative)
▪ 1 Teaspoon Vanilla Extract
How to
1. Preheat oven to 350°F and prep a muffin tray by lining and spraying with non-stick spray
2. Whisk together cinnamon and stevia in a small bowl then set aside
3. Flour a surface then begin combining all biscuits to make one ball before rolling out to about 12-15 inches wide and about 1/4-1/2 inch deep
4. Dice up butter and place arund the dough then sprinkle the cinnamon mixture over top
5. Roll up the dough into a log (hot dog stype) then cut into 20 individual cinnamon rolls and place on in each muffin cup
6. Bake for about 12-15 minutes. While baking prepare glaze of choice (or both) by whisking together ingredients
7. Once rolls are baked, drizzle glaze over top

Tips:
1. Great source of protein and probiotic! I love to buy plain because it's really a blank canvas--you can use it to make Tatziki sauce or add some syrup and fruit and make it super sweet!
2. Minimal carbs and no fat per serving and really just a blank canvas! You can flavor and use it however you want!
3. Don't limit yourself with this product--you can create cream sauces, cream cheese spreads, and even homemade biscuits!

Tips:
1. If you're looking for a sugar substitute that is natural, stevia is the route to go! Definitely my favorite alternative and I love that it actually comes from a plant and is not made with artificial ingredients
2. You can buy individual packets of it, which I buy for my coffee, but then you can also buy a jumbo bag for baking, which I usually also purchase!
3. Many times the package of stevia will say that it can be substituted 1:1 compared to sugar but I will say if you google it--the one thing everyone says is not to follow that. Stevia is many times sweeter than sugar so it's best to do about a tbsp for every 1/2-1 cup of sugar and taste test and add as you go. If you add too much stevia you'll find your baked goods to almost have a bitter after taste (trust me I've made the mistake a time or two…or 7)

Tips:
1. Milk alternatives are pretty popular these days but I love me some almond milk! I typically will buy unsweetened vanilla or unsweetened original. Both options are great for not only baking but also cooking savory dishes!
2. Making your own almond milk is also super easy and an option but let's be real, I'm at the store buying a container every few weeks.
3. The great thing about almond milk is that it lasts a super long time! A lot of containers will say use within 7-14 days of opening but I have kept containers for at least a few weeks and they're still good as new. How bad can almond and water really get??
